With the huge rise in popularity in recent years, Rosé is certainly taking on the title as top drop and can we blame it?
Here’s a few thoughts on what our winemaker Pip had to say on all things Rosé;
There's quite the challenge to creating a Rosé wine, so many components have to line up and as a winemaker I enjoy making such a popular wine style. It begins with ensuring our fruit is harvested at the perfect balance of sugar and acidity for the desired style, and then moves on to the juggling act of allowing the perfect time on skins to get that gorgeous blush. I like to do lots of small batches and play around with whole bunch and destemmed portions, as well as barrels and wild ferments to add complexity and texture, and cool fermented stainless portions, which add fruit purity and aromatics. We are lucky to make two different styles here, our Mount Michael Estate Rosé and The Mountaineer Rose. The Estate wine all comes together at blending, I love experimenting with all the batches to create that dry, elegant, complex style that works so well with food. The Mountaineer keeps things fresh, fruity and super drinkable.
